IN 1998, the Ugandaraised Bipin Patel opened a desi vegetarian restaurant in the town of Missoula, in the American state of Montana.  He called it Tipu’s Tiger, after the famous sculpture of the same name, which he had seen at London’s Victoria and Albert Museum, and which precipitated his interest in Tipu Sultan, the 18th-century ruler of Mysore. In no time he realized that his menu had a roaring tiger of its own: the chai Patel made using his
grandmother’s recipe.
